When a player buys chips from a dealer, either as a buy-in or as a re-buy to get into the game, s/he pays the dealer cash which the dealer gives an equivalent amount for, in chips. When the casino or the game room picks up this money from the dealer, then it is known, quite literally, as a pick up.
